Lemon Ricotta Bruschetta.

A great looking and tasting recipe in a snap!

I can not tell you the amount of times I have been asked to bring something to a party or dinner and not known what to bring. This recipe could not get any more simple.. or pretty! The holidays are coming up so if you need to impress your family with your amazing cooking skills, this is the dish to do it with. Keep the ingredients to yourself and brag about how long you slaved in the kitchen as you pass out this finger food. I made these on the side of my Pasta Fresca but they truly could go with any meal. 


Lemon Ricotta Bruschetta

What you need:
- 1 baguette, thinly sliced
- 8 ounces ricotta cheese
- 1 lemon, zested
- Salt
- Freshly cracked black pepper
- Honey
- 8 sprigs fresh thyme

Preheat oven to 425 degrees. Mix together ricotta and lemon zest. Season with salt and pepper to taste. Set aside. Toast baguette slices in the oven for 5-7 minutes. Spread with seasoned ricotta. Drizzle with honey and sprinkle with thyme. Serve warm.
