Summer Veggies, Part 2.

Remember the last time I made sweet potato fries? Well these are completely different...



When i made the Curry Zucchini Strips, we ate them with Trader Joe's ravioli's and some of these sweet potatoes. The recipe originally called for slices of sweet potato but I like the fry shape better! These babies have a nice kick with a hint of lime to cool you down. Who doesn't love chili lime?




Spicy Sweet Potato Fries

What you need:
- 1-2 large sweet potatoes
- 2 Tablespoons olive oil
- Juice of two limes
- 1 tablespoon of chili powder
- 1 teaspoon cayenne pepper
- salt and pepper to taste


Preheat oven to 400 degrees.  Slice potatoes into wedges or fries (Sometimes this is very difficult to do therefore you may want to cook the sweet potatoes in water until soft). Toss the sweet potatoes in a bowl with the remaining ingredients. Place on top rack of over to cook for about 15 minutes or until the sweet potatoes are soft, turning them halfway through. They will take longer if your wedges are larger. When the sweet potatoes have a bit of char to them, place on a plate and sprinkle with some salt, pepper, and chili powder. 







I may have used a little bit more seasoning because I like it hot ;)
