Lunch + Sausage and Peppers Stew.

Blog change-up.

I usually show you guys what I have for dinner most nights but to be honest I usually eat the same thing for lunch the following day. I plan most meals to feed four people that way both Damian and I have lunch the next day. Sometimes were extra hungry that night or I don't feel like eating the same thing again, so I opt to change things up. In an effort to keep a budget, I try not spend money eating out during my lunch breaks because my office has a full kitchen at my disposal every day. Also included in this post is a recipe I used the other night for dinner. Due to my camera fail I only have one picture of the meal. 

 I made a "mixed bag" lunch that contained, two hard boiled eggs, an avocado  a tomato, a sliced apple, and an English muffin topped with cream cheese and prosciutto. I topped the eggs and veggies with a little salt and pepper and was full all afternoon from the proteins and healthy fats in the lunch!

Sausage and Peppers Stew

What you need:
- 1 Lb spicy Italian Sausage
- 1 yellow onion, sliced into strips
- 2 green bell peppers, seeded and sliced into strips
- 1 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (28 oz) whole tomatoes, seeded and chopped
- 1/4 cup loosely packed fresh parsley, coarsely chopped

Remove casings from sausage and crumble into small pieces. Heat a large saute pan over medium heat. Add sausage, cook, stirring often, until browned. Remove sausage from pan and set aside. Add onion and saute until soft and brown, about 5 minutes. Add peppers and continue to cook for 10 minutes more. Season with salt and pepper, add tomatoes, and bring to a boil. Lower heat and simmer about 12 more minutes. Return sausage to pan, and cook enough to heat through. Top with parsley. 

While we were handing out candy last night, we decided to dress Lu (Damian's family dog) in different costumes. She is the most precious dog, and came to the door to greet kids when they screamed for candy. 

 First, she was a pirate with a vest and an eye patch.

 Then we tried to change her into a horse- she did not enjoy this one.

My favorite photo from the night- her eyes might be closed but at least she smiled for the camera!
