Sauteed Spinach

Broccoli is boring.

When I was younger I never really cared for Broccoli. It was never an issue in my house because I loved spinach enough to make up for it. There's no denying that spinach is a nutrient rich vegetable. Benefits include Iron, Vitamin C, potassium, magnesium, omega 3 fatty acids, and the list goes on and on. According to the bag of lettuce I purchased, half of the bag was equivalent to one serving size. This recipe is an easy way to fulfill that serving. I probably could have eaten the entire batch. The taste reminds me of a side dish at a restaurant I worked at when living in New York. At age 13, I answered phone calls and handled pick up orders at an Italian Restaurant near our apartment. It was family owned and the food was amazing. My favorite part was the staff dinner every night before shift ended and pizza later in the evening. The celebrity's that frequented there weren't bad either.


Sauteed Spinach

What you need:
- 1 bag of spinach leaves
- 3 cloves of garlic, minced
- 1 Tablespoon olive oil
- Salt and Pepper to taste

In a medium skillet, heat olive oil on medium heat for 30 seconds. Add garlic and cook until soft, about 1-2 minutes.  Add bag of spinach and let it cook down for about 5 minutes, top with salt and pepper, and do not stir while cooking. 


*** Warning, one bag is only two servings. The spinach will reduce greatly.***
