For the record I for I got a person who does not eat cheese and a person who does not eat red pasta sauce to like this dish.
Having friends over for dinner and football on Thursday nights now seems to be becoming a tradition at our house. Like most of the meals this week, this menu choice was made by Damian. I actually made this recipe for him our first Valentines Day together. If you have a lot of food knowledge you are probably looking at the photos below and thinking that the dish does not look like a rollatini. If you have no idea what I'm talking about, well rollatini are traditionally, rolled. That is a lot of work that I did not want to do. Thus, make it this way, its easy and the cleanup is simple! In reference to my heading, I think this dinner is a true testament that picky eaters can try new things and like them. I know a lot of people, especially college students, don't know what eggplant tastes like. This is a great dish to test that scary vegetable out! I promise you will grow a new found love.
Chicken Eggplant Rollatini
What you need:
- 1 large eggplant (I used 3 small osnes), sliced 1/2 inch thick
- 6 oz of tomato sauce of choice
- 1 lb chicken, sliced thinly
- 4 oz prosciutto
- 16 oz shredded mozzarella cheese
- 2 Tablespoons oregano
- 1 Tablespoon black pepper
- 1 Tablespoon olive oil
Preheat oven to 350 degrees. In a large skillet, heat olive oil on medium heat. Place eggplant slices in pan and heat for three minutes on each side. In a large baking pan coat the bottom of pan with a layer of tomato sauce. Layer softened eggplant on top, trying not to overlap. Then cover with sliced chicken and prosciutto. Layer again with tomato sauce, spreading with a spoon. Finally top with mozzarella cheese, oregano, and black pepper. Bake for 40 minutes. Enjoy
Caitlin made her famous pesto bread- cream cheese, pesto, and pine nuts. Yum!
I also put together a small salad with romaine lettuce, red bell pepper, cucumbers, garlic, olive oil, and lemon juice.
This weekend Damian and I are headed to La Crosse for my mother's wedding. It will be great to see family and old friends! Have a wonderful weekend!
