Chicken Goat Cheese Quesadillas.

Me: Do you like lime Marg's or no?
Caitlin: Does it have tequila on it? Then yes. 

With a conversation like that, a good night is definitely in the works. Thursday night was filled with Mexican food, tequila, the CMA awards show, and lots of conversation. I whipped up these quesadillas when I arrived home from work and boy were they easy! I suggest making this if you have some leftover chicken laying around. If the goat cheese title scares you away, have no fear, I made Caitlin's without the goat cheese, and still received rave reviews. Did anyone else watch the CMA's? I'm a country music lover and was pretty happy to see Blake and Miranda win so many awards. Some how the weekend filled up with lots of plans already, so hopefully I will have some good recaps for you. Until then: Have a great weekend! Only 52 days until Christmas.


Chicken Goat Cheese Quesadillas

What you need:
- 3 chicken breasts, cooked and shredded
- 1 yellow onion, sliced into strips
- 3 large flour or corn tortillas
- 1/2 can corn 
- 4 ounces crumbled soft goat cheese
- 6 ounces shredded Monterey cheddar cheese
- 4 Tablespoons Olive oil
- salt and pepper to taste
- 1 tablespoon oregano

Heat 1 tablespoon of olive oil in a saucepan over medium low heat. Add onions and saute for 5 minutes. Add corn and pepper, saute for 1 minute. Add chicken and saute for an additional 3 minutes. Remove from heat. Layer each tortilla with chicken mixture, goat cheese, and Monterey cheddar. Add remaining olive oil to a frying pan and warm quesadillas over medium heat for 5 to 6 minutes, flipping halfway. 

*** I used leftover rotisserie chicken that was previously seasoned. This changed the flavor a bit so I would recommend plain chicken. Also, place ingredients on one half of large tortilla and fold to make it easier for flipping.***



I sipped on a margarita while waiting for dinner to cook.


I also whipped up some Zatarain's Rice and Beans as a side dish with salsa and sour cream. I tackled about half this dish before pulling out the Tupperware. The goat cheese really makes the inside nice and creamy!
