Summer Veggies.

Need some "different" recipes for summer veggies? Well then you have come to the right place.

My mom came up to the cities this past weekend and brought me a few LARGE yellow squash/zucchini's from my uncles garden. I wanted to do something different then the usual marinate and grill so I perused the internet for recipes. I found a pretty cool recipe on Edible Perspective that I knew I should try to make. I changed a few things up, well because I was not confident in my skills enough to make the masterpieces in the recipe (The recipe was originally for curry grilled zucchini roll ups).


I promise these taste good even if the pictures don't do them justice. 



Curry Grilled Zucchini Roll Up's Strips

What you need:
- 2 Med/large zucchini's or squash
- 1-2 Large red Peppers
~ 3oz creamy goat cheese 
- 2 Tbsp curry powder
- 1tsp oregano
- 1 tsp garlic powder
- 1/4 tsp turmeric
- Salt and Pepper
- Oil

Preheat grill to about 350-400 degrees or medium high. Once hot, lightly oil the pepper and place it on the grill on its side. Rotate 4 times for about 5 minutes per side. While the pepper is cooking, mix the spices together in a small bowl, omitting the salt and pepper. Trim the ends and slice your zucchini lengthwise, I made mine similar to pickle spears because i did not roll them. Lightly coat all of the zucchini in oil on both sides and then rub the spice mixture onto both sides of the strips. Sprinkle with salt and pepper and place on grill for 5-7 minutes on each side. Let cool. Remove the pepper, de-seed, and slice according to the size of your zucchini. once cooled, sprinkle with goat cheese down the length of each strip and place a roasted pepper on top.

I mixed two different curry's- A spicy and mild one for a bit of a kick!



These babies were served with some spicy sweet potato fries (recipe to come) and a little Trader Joe's ravioli with homemade pesto!
